10 days in Romania – What to see and Were to go!

Romania quickly became one of my favorite European destinations, having visited most countries across the continent. My decision to explore Romania came during a few months I spent in Serbia; I thought it was a great opportunity to see neighboring countries. Initially, I had little expectations about Romania, as it’s not often talked about in the States. Similar to the charm of Serbia but with its unique charm, somewhat reminiscent of any other Balkan country.

The best time to visit Romania would be in Spring and Fall as summer gets extremely hot and most places do not offer AC. Also you will need to rent a car as the train system can’t connect you well to these remote cities.

Spicy Vodka Sauce

1/2 diced onion

4 cloves of garlic

6oz tomato paste

1/2 cup ajvar (red bell pepper spread)

3/4 cup vodka

1 cup heavy cream or light cream

3 tablespoons of butter

1/2 cup parmesan cheese

1 package of rigatoni or large penne

1 cup pasta water

Chili flakes or chili paste (optional)

I made this sauce from looking at different recipes and having inspiration from having some of the best spicy vodka sauces across NYC and NJ. One in particular being one that was heavily influenced by bell pepper; hints the addition to ajvar. Then the famous Carbone simple but delicious. I took what I lived and left out what I hated.

Sauté onion and garlic together until soft and translucent. Add tomato paste and ajvar and cook until a deep red color; approximately 5 mins.

Cook your pasta al dente in salted water and reserve a cup of the liquid

Add the vodka to the sauce on a low heat and stir occasionally until most of the liquid has evaporated. Approximately 10mins. Add the cream and chili flakes/paste stir until combined and remove from heat.

Add noodles to sauce with butter and 1/2 cup of pasta water. Cook pasta until butter is melted; add more water when needed. Then add your cheese. Your sauce is ready when it is orange in color and velvety smooth.

East Coasters: you can find ajvar is most local grocery stores.

West Coasters: Trader Joe’s has something similar called red pepper spread on the isle with the ketchup

Or it is very simple to made it homemade. I make it a few times a year and freeze it. Or you can even leave it out of the recipe but definitely adds a depth of flavor

A ten yearold’s dream

When I was a child, I had always dreamt of the day I would turn 25. For some reason, that was this age when I would have it all. At 25, I would be the most beautiful and have everything I had ever wanted—my pipe dream. Never cared about being 21 or 30; it was always 25. However, one thing about me is that I don’t settle, and I’m constantly challenging myself to do more and ultimately be happy. It is strange that I’m almost not 25 anymore and I have no new age to wonder what I’ll be like. It is a relief but also I’m starting to feel like stall bread.

When I first turned 25, it was the first year I felt older on that given day. I also had all of these expectations of my life at 25. I have always been happy, give or take a few heartaches. On my 25th birthday, the birthday was so uneventful that my reservation for dinner was canceled. They said sorry can’t serve you; you are single. The first year everyone forgot to send flowers; typically, my parents always remember. To remind me that I’m a year older, wiser, but still single and just forgotten (not forgotten, but I did feel it then). I had this anxiety that this is how the most incredible year of my life is starting; getting rejected from this fancy waterfront restaurant on the lake in Bellevue, WA. So I went out and had an entire pizza by myself and a slice of coconut cream pie. At that moment, it hit me. This is another day, another year, doing what I love; eating two of my favorite foods. My birthday foreshowed what the year was to come; no plan; do what I love.

In July, I was in Seattle, enjoying the little bit of sun that city has to offer. I was starting to lose who I had worked so hard to become, living in a town that didn’t offer me anything, surrounded by no one I knew. A week after turning 25, I left for a trip to Iceland and then to Paris to spend three weeks alone. I didn’t think anything of it; until I fell in love with being in Europe alone. So I booked a one-way ticket back and stayed until near the start of the new year. When I got to Europe, I knew that when I returned to Seattle, I would need to move on from it; it did nothing for me, and I knew that immediately. A city is much like a man; you know, after a month. Keep doing him, or move the heck on.

I was nervous to tell my boss I was not returning to Seattle and would need to quit my team to find a new team in NYC. But I was never given the option, just an okay move back. So finally, a few months into being 25, I got the OK to move back, got a promotion, and lived temporarily in Europe. Life couldn’t get much better; my pipe dream at ten had come true.

At ten, I had imagined; I would be living somewhere near the beach in Central California with my husband, but that all seems so dull now; sure, it will happen one day, but at 25 was not the time nor age for that. That is the point; one day, maybe at 35, I will have a husband and kids; but for now, I am not saying no to life’s opportunities point.

Moving back to NY (or NJ) has not been that eventful. My life has calmed down a bit which I love. Still endlessly dating and getting heartbroken daily, but now that I am about to be 26, it just doesn’t seem to bother me as it used it. I feel more confident than I have ever been before in my career. I will also be spending my 26th birthday with actual humans haven’t done that in a few years. Each year my life gets better and better; 26 will be unique, I know. My ten-year-old self would be proud and happy I am a single woman taking on NY just like we pictured ourselves to do for so long. For the first year, I don’t have a plan or a vision of what it will look like. I’m just going to wing it. I leave the day after my birthday to the South of France, another vacation solo. How I love it; everyone asks me what I am doing on vacation? My answer is: who knows; everything.

My life at 25 not 35

One of my best friends texted me as I was sitting on the floor watching movers come in and out of my apartment for my seventh move since I was eighteen. I needed to hear his text which ultimately made me tear up in the middle of these movers asking me where I wanted my couch.

The text was a screenshot from LinkedIn, saying along the lines of we have a lot of pressure as women to be successful but somehow simultaneously get married and become a mom and when we reach 30 and we don’t have those things, we are doomed. But in the end, it says everything will happen in time. He knows all too well my struggle with this age clock ideal; of needing to find a husband and be a mom before I am 35.

I met a coworker for the first time this week; we sit on the same team but in different cities, and she was visiting NYC. I told her I was moving into my new apartment in New Jersey; she was like, wow, you really don’t have roots anywhere; that is an incredible and empowering woman. I knew exactly what she met, and she knew I moved around, spent months alone in Europe, and whatnot. I was supposed to take this as a compliment: which I did. But as always, I wanted to shout at her, saying; I want roots! I want permanent people in my life! I want a routine! But the issue with that is it just isn’t me; I’m seeking the best of both worlds instead of just living the life I currently have.

My life is exactly how I wanted it to go; I got most things I have wanted because I worked hard, fought for it, and ultimately didn’t tell myself no. I think my lifestyle is fascinating to most and others, a waste of time.

When my friends describe me, it isn’t what they used to say in college. The common themes now are fiercely independent, career women, graceful. I’m not sure when or how that changed or how people perceived me started. I’m not angered by it, but it reminds me how much I depend on myself and not on others, which is a valuable asset to have, and also how no one depends on me. However, it brings me back to something my ex-boyfriend told me years ago. He said Sarah, don’t stay single too long; you will become too independent and used to your routine. It will make it nearly impossible to let anyone in but stay single long enough to find yourself. I’m approaching this fine line of being single a little too long now. I haven’t been in love or had someone love me for five years now. But, I have found myself also, I love myself, and I’m confident in myself.

My lifestyle has become very centered around me. I take off for weeks, sometimes months at a time, on a whim. That is something I don’t want to give up, at least not right now. So, where does this leave me? In limbo.

My 2022 goal was to find a routine and permanent people in NYC. I’m not talking about that one person I get dinner with once a month or the couple of friends I get drinks with. I mean real permanent people with real conversations that will last with me for a lifetime. It’s the only thing in my life that I genuinely feel I’m missing. If I can do all the rest, I can do this with ease; my fear of rejection. I will not give up the lifestyle I want; it may or may not change with age and meeting new people, but I will continue to do what I wish to do while understanding I can do it with people around me.
